A production Dry Brine employee is responsible for the trimming and brining of salmon fillets for cold smoking, as well as assisting with freezer pull, (the process of thawing salmon fillets), De-brine, (the process of removing salt from brined salmon fillets) and cleaning and sanitizing the work areas.


Include but are not limited to:

  • Must be able to lift 60lbs.
  • Must be able to push salmon trollies.
  • Works under refrigeration (55 degrees F.)
  • Required to stand, bend, twist, push and lift throughout the shift.
  • Must wear proper “PPE” - smock, hair net, apron, cutting glove, rubber gloves and boots.
  • Transports pallets of fresh salmon from salmon cooler to the brining stage cooler utilizing a pallet jack.
  • Assists in the cleaning and sanitation of the dry brine room and coolers.
  • Assists with Freezer pull, (thawing frozen product for brining).
  • Fills out appropriate paper work both clearly and accurately.
  • Must learn and understand WIP numbers.
  • Must be able to follow safe work and sanitation standards.
  • Must be flexible in both work assignments and hours worked.
  • Must be able to work independently and as part of a team.
  • Must follow safe work and sanitation standards.
  • Must follow company policies and SOP’s
  • Must participate in stretch breaks.
  • Must be commitment to the Mowi code of conduct and vision and values.
  • Must be flexible in both work assignments and hours worked.
  • Must be detail oriented with good organizational, prioritization and communication skills.
  • Must have the ability to apply common sense to carry out instructions, both oral and written.

While performing the duties of this position, the employee is regularly required to stand and walk on textured concrete floors for a minimum of eight hours. He/she will be using their arms, hands and fingers to handle, feel, reach product. There is also, a lot of pinch gripping. Noise level in work environment is usually moderate. He/she is required to use proper PPE, (Personal Protective Equipment) appropriately to prevent injury to self or others. Vision requirements include: close vision, distance vision, depth perception, and the ability to adjust focus.
