Started in 1978, Ducktrap River of Maine is an all-natural smokehouse located on the coast of Maine with a strong commitment to producing premium quality smoked seafood.  Ducktrap sources premium-grade seafood, uses traditional smoking techniques and combines the natural flavor of custom brining recipes with the savory smoke from local apple, cherry, maple and oak woods. Ducktrap’s wide variety of smoked items including Atlantic Salmon, Wild Sockeye, Rainbow Trout, Wild Mackerel and Shellfish, along with several other quality products, accommodate customers’ needs for diversity on menus and in retail cases.

Summary:

The Processing Room Quality Control Technician is responsible for performing and documenting day-to-day food safety and quality activities. Responsibilities include product inspections, product testing, and other compliance duties as assigned.

Responsibilities:

Include but are not limited to:

  • Performs essential day-to-day QC activities in a ready to eat product area. These activities include, but are not limited to: chemical titrations, calibrations, product inspections, smoked seafood specific food safety assurance processes.
  • In plant activities that include: plant environmental microbial sampling, preparing finished goods samples, conducting finished goods quality analysis, inspecting product packages, training employees on quality and food safety compliance.
  • Data collection and input in a timely manner.
  • Organize and file documents.
  • Assists in the review of various HACCP verification activities.
  • Effectively communicates observations with QC staff and management.
  • Daily sensory evaluation.
  • Assist with R&D projects as needed.
  • Additional Quality and Food Safety activities as required.
  • Seeks continuous improvement.
  • Must be reliable and trustworthy.
  • Must be well organized, prioritize and use time effectively.
  • Maintain confidence and protect the company by maintaining a level of confidentiality.

QUALIFICATIONS NEEDED FOR POSITION:

Experience and Skill Requirements:  The following experience and skills are considered essential:

  • At least 1 years of quality control/food safety experience in processing/manufacturing preferred.
  • Seafood HACCP certified or able to become certified immediately after acceptance.
  • Basic knowledge of laboratory and sampling skills.
  • Knowledge of seafood processing and sensory evaluation preferred.
  • Knowledge of GMPs, SOPs and SSOPs.
  • Ability to follow instructions and meet deadlines.
  • Competent in the use of Microsoft Office applications, including Word and Excel.
  • Be able to work independently and as part of a team.
  • Extremely detail oriented with good organizational/prioritization skills.
  • Excellent communication skills – both verbal and written, including the ability to accurately record data and create reports.
  • Ability to actively listen and to accept criticism.

Education Requirements:  The following education requirements are essential:

Associate’s degree in science is preferred, or closely related work experience, required.

While performing the duties of this position, the employee is regularly required to stand and walk on textured concrete floors for a minimum of eight hours. He/she will be using their arms, hands and fingers to handle, feel, reach product. There is also, a lot of pinch gripping. Noise level in work environment is usually moderate. He/she is required to use proper PPE, (Personal Protective Equipment) appropriately to prevent injury to self or others. Vision requirements include: close vision, distance vision, depth perception, and the ability to adjust focus.

The noise level in the work environment can vary from relatively quiet to loud.  Some work is performed in an office, while other work is in the plant involving frequent exposure to varying environmental conditions that including hot to freezing, wet, humid and slippery floors. Some areas require complete sanitary garb, from booties, to coats, to hairnets. Some areas may require safety glasses and shields.
